Phipps Fam's Chicken Gumbo (Cajun, Not Creole)
Boil and de-bone 1 whole chicken or 2-3 breasts, Save and strain broth.
Fry and crumble bacon (amount to taste)
Make roux from 1 cup fat (canola oil + _ bacon fat), 1 cup flour.
Saute chopped celery, bell peppers, onions.
Season liberally with cayenne, salt, pepper, thyme, garlic (can use fresh, or powder, or both)
Fried okra for garnish (optional)
Steamed rice of good quality, such as regular Texmati.
Add all together and simmer. Remove bay leaves. Serve over rice with crackers and hot sauce. Garnish with fried okra and/or fresh green onions or parsley.
Optional additions/substitutions: Can use sausage or any seafood with or without chicken. I have even used white beans for vegan gumbo. This gumbo is to please our whole, picky family and it is delicious, but okra and/or tomatoes and/or file can be added, if desired.
